This vibrant salsa perfectly accompanies chips, fish, chicken, or even a salad! It’s sweet, tangy, and refreshing, and comes together in just a few minutes.
Ingredients:
- 2 cups chopped ripe mango
- 2 cups chopped fresh pineapple
- 1/2 cup diced red bell pepper
- 1/3 cup diced red onion
- 1-2 jalapenos, seeded and minced (depending on your desired spice level)
- 1/3 cup chopped fresh cilantro
- 2 tablespoons freshly squeezed lime juice
- Salt to taste (optional)
Instructions:
- Chop the fruits and vegetables: Wash and chop the mango, pineapple, red bell pepper, red onion, and jalapeno into small, bite-sized pieces.
- Combine everything in a bowl: In a large bowl, combine the chopped fruits, vegetables, and cilantro.
- Add the lime juice: Pour the freshly squeezed lime juice over the mixture.
- Season to taste (optional): If desired, add a pinch of salt to taste. You can taste the salsa with a chip before adding salt, as the chips might add some salinity.
- Stir and chill: Gently stir everything together until well combined. Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld. This step is optional, but chilling helps create a more developed flavour.
Tips:
- For a spicier salsa: Leave the seeds in the jalapeno, or add another jalapeno.
- For a sweeter salsa: Use less lime juice or add a teaspoon of honey or agave nectar.
- Make it ahead: This salsa can be stored in an airtight container in the refrigerator for up to 5 days. The flavours will continue to develop over time.
