Ingredients:
- 1 pound of fresh shrimp, peeled and deveined
- 1 cup of fresh lime juice
- 1 cup of diced tomatoes
- 1/2 cup of diced red onion
- 1/2 cup of chopped cilantro
- 1 jalapeño pepper, seeded and finely chopped
- Salt and pepper to taste
- Tortilla chips or tostadas for serving
Instructions:
- Bring a pot of water to a boil and add the shrimp. Cook for 1-2 minutes until the shrimp turn pink and opaque. Drain and rinse the shrimp under cold water.
- In a glass or ceramic bowl, combine the shrimp and lime juice. Make sure the shrimp is completely submerged in the lime juice. Cover and refrigerate for 1-2 hours, stirring occasionally, until the shrimp is opaque and firm.
- Once the shrimp is ready, drain off most of the lime juice. Add the diced tomatoes, red onion, cilantro, and jalapeño to the shrimp. Season with salt and pepper, and gently toss to combine.
- Serve the shrimp ceviche with tortilla chips or tostadas. Enjoy!
