Starbucks Egg White Bites have become a popular breakfast option for many Starbucks customers. These protein-packed bites are a favorite choice for those looking for a healthier alternative to traditional breakfast sandwiches. But what if you could make these delicious bites at home?

Ingredients:

  • Eggs whites (16 oz carton or 2 cups)
  • Cottage cheese (2/3 cup)
  • Shredded cheese (Monterey Jack or Mozzarella, 1/2 cup)
  • Diced vegetables (roasted red pepper 1/4 cup, spinach 1/2 cup, chopped – optional)
  • Salt and pepper (to taste)

Instructions:

  1. Preheat your oven to 325°F (163°C). Lightly grease a silicone muffin tin with cooking spray or oil.

  2. In a blender, combine egg whites, cottage cheese, and shredded cheese. Blend until smooth and creamy, about 30 seconds. Season with salt and pepper.

  3. If using vegetables, add them to the blender and pulse a few times to incorporate without over-chopping.

  4. Divide the egg mixture evenly among the muffin cups, filling them about 3/4 full.

  5. (Optional) To create a water bath for even cooking, place the muffin tin on a baking sheet and carefully pour boiling water into the baking sheet halfway up the sides of the muffin tin.

  6. Bake for 25-30 minutes, or until the egg bites are set and cooked through.

  7. Let cool slightly before removing from the muffin tin and enjoy!

Tips:

  • Experiment with different cheeses and vegetables to create your flavour combinations. Here are some ideas:
    • Cheeses: Gruyere, cheddar, feta
    • Vegetables: Sun-dried tomatoes, mushrooms, chopped ham
  • You can use a regular muffin tin lined with parchment paper instead of a silicone mould, but you might need to adjust the cooking time slightly.
  • For a quicker method, you can cook the egg bites in a sous vide precision cooker at 167°F (75°C) for about 60 minutes.
