Ingredients:
- 1 stick (1/2 cup) unsalted butter, softened
- ¼ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)
- 1 cup all-purpose flour
- ¼ teaspoon salt
- 10 teaspoons strawberry jam
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract (if using).
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll heaping tablespoons of dough into balls and place them on the prepared baking sheets.
- Use your thumb or the back of a spoon to make a well in the center of each cookie.
- Fill each well with about 1 teaspoon of strawberry jam.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
