Strawberry Jam Butter Cookies

Ingredients:

  • 1 stick (1/2 cup) unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 10 teaspoons strawberry jam

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract (if using).
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Roll heaping tablespoons of dough into balls and place them on the prepared baking sheets.
  5. Use your thumb or the back of a spoon to make a well in the center of each cookie.
  6. Fill each well with about 1 teaspoon of strawberry jam.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
