Ingredients:

  • Seedless watermelon (about half)
  • 2 cups lemonade or limeade (frozen or concentrate)
  • 1 cup club soda or lemon-lime soda
  • Simple syrup (optional)
  • Fresh mint leaves (optional)
  • Watermelon slices and berries for garnish (optional)

Instructions:

  1. Cut the watermelon in half. Using a spoon or ice cream scoop, remove the flesh, leaving a 2-inch border around the rind.
  2. Blend the watermelon flesh in batches until smooth. Strain the juice through a fine-mesh sieve to remove any pulp.
  3. In a large pitcher, combine the watermelon juice, lemonade or limeade, and club soda. Taste and adjust sweetness with simple syrup if desired.
  4. Chill the punch in the refrigerator for at least 2 hours, or until serving.
  5. To serve, pour the punch into the hollowed watermelon rind placed on a platter. Garnish with fresh mint leaves, watermelon slices, or berries.
