Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced

  • 4 cups frozen peas
  • 4 cups vegetable or chicken broth
  • Salt and black pepper to taste
  • Optional: ½ cup heavy cream or milk for extra richness

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened about 5 minutes.
  2. Stir in the garlic and thyme, and cook until fragrant, about 30 seconds.
  3. Add the frozen peas and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the peas are tender.
  4. Remove from heat. Using an immersion blender or a regular blender (in batches), puree the soup until smooth.
  5. Season generously with salt and pepper. Stir in the cream or milk (if using) and warm through.
  6. Serve with a dollop of sour cream, a swirl of olive oil, fresh herbs, or crusty bread.

Vegan Variation: Use olive oil or another plant-based fat and omit the cream, opting instead for a splash of plant-based milk.
