Frozen Pea Soup

- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 4 cups frozen peas
- 4 cups vegetable or chicken broth
- Salt and black
- ½ cup heavy cream or milk
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened about 5 minutes.
Stir in the garlic and thyme, and cook until fragrant, about 30 seconds.
Add the frozen peas and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the peas are tender.
Remove from heat. Using an immersion blender or a regular blender (in batches), puree the soup until smooth.
Season generously with salt and pepper. Stir in the cream or milk (if using) and warm through.
Serve with a dollop of sour cream, a swirl of olive oil, fresh herbs, or crusty bread.
