Ingredients:

  • 4 large pink grapefruits
  • 1 lemon
  • 1 1/2 cups granulated sugar
  • 1 packet (about 7 grams) powdered gelatin
  • 1/2 cup cold water
  • Optional: a few drops of pink food coloring

Instructions:

  1. Squeeze the juice from the grapefruits and lemon. You should have about 2 cups of juice in total.
  2. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.
  3. In a saucepan, combine the grapefruit juice, lemon juice, and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Don’t let it boil.
  4. Remove from heat. Stir in the bloomed gelatin until completely dissolved. Add a few drops of pink food coloring if you want a more vibrant color.
  5. Pour the mixture into a mold or individual serving dishes. Let it cool to room temperature, then refrigerate until fully set, about 4 hours.
