Ingredients

  • 4 large pink grapefruits
  • 1 lemon
  • 1 1/2 cups granulated sugar
  • 1 packet (about 7 grams) powdered gelatin
  • 1/2 cup cold water
  • Optional: a few drops of pink food coloring

Instructions

  • Squeeze the juice from the grapefruits and lemon. You should have about 2 cups of juice in total.
  • In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.
  • In a saucepan, combine the grapefruit juice, lemon juice, and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Don’t let it boil.
  • Remove from heat. Stir in the bloomed gelatin until completely dissolved. Add a few drops of pink food coloring if you want a more vibrant color.
  • Pour the mixture into a mold or individual serving dishes. Let it cool to room temperature, then refrigerate until fully set, about 4 hours.
